I made Enchiladas on Saturday. Yummy.

I've got scrambled eggs on a bagel for lunch and roasted veg, cabbage and whatever I find in the freezer for dinner.

Try mashed potato on the bottom then some wilted spinach. Put the smoked haddock on top, then top it off with a poached egg and cover the lot in cheese sauce.

OK, I just had to do an emergency swticheroo!

Mince browned, went to the cupboard..... wrong sauce.

After a brief aaaarrghhhhh moment my brain did something it's never done before and said "right bitch, you can do this... you've got the stuff for a balti"

So some super quick chopping and cupboard content flinging I've now got a beef balti on the hob.

Fuck knows what it's gonna taste like we shall see I guess!

I'd like to thank my love of the weight watchers chicken balti recipe for giving me the confidence to perform this miracle and not just cry and lob it in the bin because I got stuck not knowing how to fix it

Today I was going to try and get back into my healthy eating followed by a first home workout since August. I had porridge and a protein shake so far. How the heck I am gonna make my macro nutrient quota is beyond me let alone exercise. Heck I don't even know if I have it in me to even make a simple sandwich right now.

Hmmm... Each McVities Digestive biscuit contains 1.0g of protein it seems...

It was yummy one of my go to naughty tasting yet not so naughty meals. Mac cheese was a low fat recipe my sister found in a readers digest cook book about 20 years ago and we have both stuck with it as it works

Lazy tea tonight, made a batch lot of mac cheese with chorizo last week and portioned it down. So tonight is mac cheese with garlic and herb chicken and avocado salad with cumin and lime dressing that I made earlier
