"Why is it ok to cook some meat from frozen but then some stuff says defrost first?
In the olden days you had to defost everything....now it's all a bit confusingizing.

I'd take a guess that because it's "easier" to get the core temperature higher if something is cooked from defrost.
People maybe weren't confident enough in days of old that they were gonna get it right if cooked from frozen as it takes longer and can look cooked, when actually it ain't, and you've got bacteria in the middle all ready to fuck you up |

A lot of it is down to the travelling time of the product.
Most fresh UK meat is fine to be cooked either way , whereas it's usually for example New Zealand lamb has had to be frozen for at least part of its journey to the UK due to sheer time in transit |

If it says defrost first then yeah, I'd defo follow the instructions.
I work with food yeah, but I just carry it to tables
There's some stuff I know but plenty I don't and molecular level issues is a don't.
Also, if you cook from frozen and munchkin gets poorly, you've no comeback as you didn't cook as per instruction.
What I will say though, don't wash your chicken. Loads of people do and that's bad bad, you can splash bacteria like campilobacta (probably spelt that really wrong!) onto other surfaces, and that's a big bad bacteria. |

That however is not evidence that cooking some meats from frozen is not potentially hazardous

In the main if its a big joint then yes defrost as the outside will spoil before the core is cooked but generally if its cooked thorough to the correct core temp it will b ok been a cook all my adult life and not killed anyone either!! x |

I think it's to do with a cavity, if it's got one then you should defrost first because of the possibility of bacterial growth in said cavity, like chicken. |

I just think follow the cooking instructions, they’ve been carefully tested and recommended for a reason.
Processed meat seems to usually be ok to cook from frozen although some unprocessed meat is ok too. It’s probably more to do with the preparation, storage and transportation methods used.
If I didn’t cook it properly or it doesn’t smell quite right the worry as to whether or not it’s safe to eat will put me off eating it.
And never re-freeze defrosted meat, unless you’ve cooked it first.

And I would not suggest going against the advice without first understanding the intricate reasoning why
The frozen whole chicken example to be roasted in my opinion should be an absolute no no
Put it in a slow cooker for a day well ill research it first but should be plausible
I honestly think "not died yet " is not evidence I'd use to follow

I would imagine it similar to having a snowball fight without gloves then getting home and dipping your hands into hot water. Not dangerous but would shock the meat. |
