Making the perfect omelette

How so??

Pan should be roasting hot, butter in it. I cover my omelette with a lid as this fluffs it up. Or I finish it under the grill.

Two duck eggs whipped up with sea salt and black pepper

Into a pan with melted butter

Grated mature cheddar down one side with some trims of crispy bacon

Don't bother fannying about turning it into a crepe affair, 1 flip is enough

I like to let a bit of the cheese ooze out into the pan, so it crisps up

This sounds epic (maybe minus the bacon). With crumpet loaf, perfection.

Also - make sure you have the right number of eggs for the size of pan - a large frying pan needs 3 medium eggs (don’t add any milk) and a small special omelette pan needs 2. Ideally you should keep one pan only for omelettes or pancakes and not fry anything else in it - don’t wash afterwards and wipe clean with kitchen paper towels.
