What is with vegetarians and vegans with food?

Why do they/you still refer to their dishes as having meat in them, vegetarian chicken casserole for example as a lady did on an other thread?

I once watched my brother-in-law, a devout vegan for ethical reasons, cooking. I asked what he was making, KFC chicken strips he said!
