How do you crisp up duck skin without over cooking the red meat ?? Just bought some frozen from farmfoods only £4

First defrost . Take skin off , salt it and put it in oven it will crisp . Then put in your duck. Till it’s just cooked . Take out and leave to stand.. serve with roast potatoes, buttered cabbage and a sauce. Hx

Thank you hotmale,

you've made my mind up - plumb fatty delicous duck skin off - salted pepperd & mixed spice - oven tray - high grill - pan fry the duck till caramelized - brown but tender inside.

Mix in the duck juices into chinese noodles with chowmein sauce & juicy caramalised - mushrooms

Make sure the duck skin is on a trivet either under the grill or in the oven. Reared duck can be very fatty so you need to get rid of the fat for it to crisp up. BUT save the fat for cooking your sunday roast potatoes in, absolutely lovely
