"Lovely in theory not so good in reality, anyone got a descent recipe I can try while my oven is out of action?"
Simply got nothing on a Corn Beef Pie or Pasty. If I'm eating Corned Beef, I want something denser than a neutron star. |

Do you have a microwave? If not buy one?
Assuming you do:
Frozen baked potatoes.
Microwave beans.
Buy cold meat such as corn beef/ham from butchers.

Serves 1
1/2 tin of corned beef
3 Maris piper potatoes
1 medium red onion
1/4 tsp salt
1/2 tsp black pepper
1/4 tsp mixed herbs
Olive oil
Chill your beef beforehand, makes it easier to cube.
Cut beef and spuds into roughly 1cm cubes
Par boil spuds (around 4-5 minutes should do). Drain and let dry.
While doing that fry the onion in a little oil. Once it starts to soften add the potatoes and seasoning and enough oil to stop sticking (1 to 1 1/2 tbsp) fry over a medium to high heat for 4-5 minutes or until potatoes start to brown.
Turn off heat, add corned beef and mix gently until the beef is just starting to soften and come apart. |
