Deglaze that pan with a splash of red wine. I usually serve mine mid rare, with new-potato wedges and something green and crunchy on the side. In weather like this, a rocket and watercress salad with cherry tomatoes would go down nicely  |

they're everywhere, avoid if possible. Seasoned with cayenne or paprika and deep fried. |
