Mr does brine a lot of meat for the bbq apparently very popular in USA and it is so moist once cooked.
Latest was a sticky bbq beef short rib with Jack Daniels in the sauce ,absolutely fantastic it was |

I can see that working really well, because the salt will preserve and mature the meat at the same time, so you'll have plenty of flavour and moisture.

Nothing like a beef short rib to make you feel all caveman like.
My own preference would be a very thick ribeye smoked and reverse seared over charcoal. Seasoning: salt, pepper and garlic powder. |

Marinaded first for two days in the mix
Slow roasted
Cool
Carve n freeze
Lovely with steam rice ,pak Choi and a hoisin drizzle |
