Well, I usually beat the meat in the tub before leaving it in the fridge overnight.

But..... I know the filth that will follow after saying that.

Seriously

2 vital parts

One onions

Cook long and slow till very soft and brown or dark brown

Two the masala paste (masala meaning mix of spices)

Make paste with your preferred spices and water

Enough oil and fry for couple of mins do not burn

Garlic think you added enough add more

Prunes

Do not underestimate the role sweet fruits can play

Time longer the better

My mate is an Indian chef. His dishes when away from the restaurant and he can take his time are out of this world. Love going around his at Christmas.

I bet that is delicious, I've honed my culinary skills from many good chefs over the years, but there's always room for improvement

But

A variety of vegetables and pulses

I make different masala blends

And may add

Chick peas

Potato carrots celeriac courgettes cauliflower broccoli

Occra Swede lentils boloti beans butter beans peas split peas pinto beans celery yam

Kidney beans spinach

Whatever really
