Just my opinion, but if it's for a man - fillet is too delicate. Personally, I'd prefer rib-eye. And I'd lose the fried egg - runny yolk and peppercorn sauce doesn't sound appealing. Otherwise, all good |

Sirloin is better than Fillet. Fillet is posh and tasteless, sirloin is meaty and yum.
Hot skillet, room temperature steak, oil (not olive oil, it burns) and season, fry for 2 minutes each side. Let it rest before cutting!
Goes great with mushrooms, cook them down in a separate pan and then crisp them up in the skillet while the steak is resting. |

If you are going for sirloin, cook it medium, the better quality of steak the less cooking time it needs
If you use a rump then batter it with a rolling pin before you cook it to tenderise it, and it can be quite tough if cooked on too high a heat.
Don't put the oil in the pan, baste the meat with it beforehand. When you lay the steak in the pan lay it away from you so it doesn't spit back.
Make your own pepper sauce, just a normal bechamel base, add an oxo then shit loads of pepper, proper kernals in a grinder, a little salt.
And for extra wow make your own beer battered onion rings

Griddle pan wise choice, oil the meat not the pan, let the stake come to room temp before cooking “ never straight from the fridge “ and let the steak rest for around 5 Minutes covered loosely with foil after cooking. |

Oh fuck yes! A sirloin can be grilled in anyway to ones liking. I prefer it Medium rare. It's my favourite steak. I had steak tonight grilled on my George foreman grill, handy! With Chips, onion rings, mushrooms, grilled tomato and peppercorn sauce. Who needs a man, I'm stuffed x |

Rib eye! And I reckon butter instead of oil. Then cook till sealed and brown, flip over and cook till blood seeps onto the top. Rest. Blue cheese is so much nicer than peppercorn

The best steak I've had was a U.S. Porterhouse at a steak restaurant in Berlin, it was 100€ just for the meat, sides were separate, but my god drooling thinking about it!
Also had a rib eye at a south African restaurant in Cyprus with Braii sauce last year which came very close. Fucking hell I could never be vegan |

Definitely go do fillet steak.
I wouldn’t worry about peppercorn sauce.
Steak done correctly medium rare will be full of delicious flavours, a bit of salt to bring those out should be enough.
Serve it in sexy underwear ( you not the steak) . it will be perfect |

On the subject of steak, we have just been planning our end of lockdown barbecue, This will centre round a whole fillet (Chateaubriand) wrapped in foil and cooked on a Webber charcoal barbecue. Expensive I know, but as I am not spending £50 a week on diesel that will not be a problem. |

Top tip: oil the steak, not the pan. A very small amount of oil (rapeseed is good) rubbed into a room-temperature steak, seasoned with salt and pepper will seal in the juices and keep it tender & tasty. Get the dry pan super-hot and drop it in to sear on each side. |

Mine is the old school one. It’s basically a saucepan with no handle full of crisp and dry oil with a metal sieve in it! I don’t have a fryer. Scampi will be some in there too and the onion rings! |

I use rapseed oil cooks to a much higher temp giving a crisper chip. |

Flash fry the steaks both sides in the griddle pan to seal then pop the hole pan if you can into the oven.
Depending on size of stakes how you like them finished 180 fan pre heated oven 5-8 minutes. Then leaves to rest for around 5 minutes.
And always cut across the grain. |

I like a good rib eye but I find it hard to find a good one. Usually it's too fatty and sinewy.
Peppercorn sauce is the tomato ketchup of steak dishes.
I get mine delivered from an abatoire 30 miles away. Buy in bulk every 3 month. Been using them 20 years. There T Bones are massive"
