Valencia, great city with lots to do and also right on the coast if you fancy a day or 2 on the beach as well.

Check out Croatia Dubrovnik , it’s fab not to many tourists in early June get out to the islands on the cheap ferries it’s fantastic and not to hot

Lviv Ukraine I've been all over Europe but this place is incredible. Bosnia or Montenegro as two hidden gems. Gdansk and Zakopane in Poland get honorable mentions
