I’ve had a hankering for a bowl of pho lately, failing that a sour dough sandwich with proper butter, spiced beef, Dubliner cheddar cheese, fresh lettuce leaves, tomatoes and some red onion marmalade. Mmmm |

Typically sausages, back bacon, onions , leeks, potatoes cooked in stock with bay leaf , thyme, garlic , parsley. I add some flour to thicken the stock then served with toasted buttered soda bread |
