lemon merringue ice cream

Lemon meringue ice cream

3/4pt (400mls) double cream softly whipped

500 gms Greek yoghurt

6 oz sieved icing sugar

Rind of 3 lemons

4 pz crushed meringues

Jar lemon curd

Combine cream sugar yoghurt and lemon rind Stir in crushed meringue

Put in freezer

You can put in loaf tin remove from freezer and stand in warm water for 5 minutes slice or cn put in moulds or icecream carton

Anyone care to add their own recipes

We just whisk it initially and then freeze it. It really is that easy lol

That sounds amazing! Must try it. They do a version of it in lidl if I fail. Ha ha

I attempted to make apple sorbet recently. Failed at the sorbet part but tasted pretty damn good, was like the old apple frog ice lols.

Ok my receipe is Ginger Nut and Pineapple Log

Packet of ginger nut biscuits

Tin of crushed pineapple in own juice

Cream

Chocolate buttons

Flake

Whip the cream as normal

Strain the pineapple

Keep pineapple juice

Mix pineapple into the cream

Place a layer of cream mixture onto plate/tray/tin....bout 0.5 inch

Dip biscuit into juice for approx 5 or 10 secs

Put a teaspoon of cream on top of biscuit.

Dip next biscuit in the juice and stick it to first biscuit with the cream.

Place these in the layer of cream on your plate side by side

Continue to dip all the biscuits and sandwich to each other with the cream (bit like block laying )

You should end up with a line of dipped biscuits stuck together with the cream mixture

Now coat the top and sides with remaining cream mixture

Decorate with chocolate buttons

Crush and sprinkle with the flake

And its ready to devour

Ps Alcohol of choice can be added to the dipping juice if desired......this is entirely optional

The only pear cider that I cab drink more than one of was Stella's pear Cidre

Another recipe from my mum's store cupboard, white chocolate cheese cake

Digestive biscuits and butter made into normal biscuit base and left in fridge for an hour

500mls double(or single cream for a lighter touch)

Small tub of Philadelphia

Small tub of mascarpone

(The 200ml one not the family sized one)

Lemon essence

Large bar of white chocolate

Bag of milky bar buttons

Mix or whisk the Philadelphia, mascarpone and cream together with lemon essence.

Melt the bar of chocolate and mix with cheese and cream mixture. Once nearly all mixed put half the pack of buttons in and whisk until all mixed together.

Take base out of fridge and place the rest of the buttons on the base and then cover base with mixture. Then return to fridge until it is set

Got to be the cheaper digestives though. The mcvities are too soft and the chocolate goes all mush

made this an hour or so ago........waiting on it to freeze - if I could stop running to the freezer every 5 minutes to check
