For a weekend brunch, thick American style.

For Pancake Tuesday, in between…not crepes, not American style.

ALWAYS made with buttermilk makes them much lighter.

Beat the egg whites stiff separately and fold them into a buttermilk batter of pre-creamed brown caster sugar and egg yolk and a touch of vanilla (never too much vanilla ) . Unreal. Takes effort to pull it off though.

Depends what I am in the mood for. They are all nice. American style blueberry pancakes, crêpes with chocolate sauce or apple compote or just normal ones with any kind of toppings. Except lemon and sugar!

We’re open to all here. Thick with some chocolate spread heavily coated on top….mmmmm licking my lips at the thought

But I also love the thin/french style. Who doesn’t love a touch of Europe in them

Has to be a nice stack of fat fluffy ones with crispy streaky bacon and maples syrup for lunch. Breakfast I would go for same but with blueberries,and strawberries.
