Making pancakes

So I’ll start off by saying I’m not the best cook (himself does the majority of the cooking) but I’ve just made some pancake mix and stuck them in the fridge for an hour (at least, it makes all the difference!) and I was wondering has anyone a recipe they swear by? Or do you add anything in that a lot of others wouldn’t? I like to look up an ingredients list when I’m making them to see what kind of ratio of flour:milk:eggs to use and I’ve found they vary ridiculously on google. I found the supervalu recipe online has a google consistency but I like to add a bit of vanilla into the mix. Thoughts?

I won’t even get into the toppings discussion (I’m a Nutella and strawberry gal whereas himself likes the traditional lemon and sugar)

Crêpe style always. I'm not a fan of those small round things from a packet.

Vanilla extract in the batter can be a nice addition, cinnamon too.

They're really nice with hot cinnamon apples this time of year.

I wing it…flour, an egg, a tablespoon of sugar, a bit of bicarb if I want fluffy pancakes and one way or another, I always use buttermilk. Add much milk to get the consistency you want and off you go!

Banana and Nutella or bacon and maple syrup for fluffy pancakes, pear and salted caramel or lemon and sugar for crepe style pancakes.

If you're going fluffy (the portion size is roughly):

Flour = 100mgs

Butter milk = 120mls (always an extra 20mls so 200mgs = 240mls)

One large egg

1 tablespoon of baking powder

A pinch of salt

And a sprinkle of cinnamon.
