Exchange secret Santa presents on Christmas Eve night

Wait till the (adult!) kids are in bed to put the presents from Santa under the tree

St. Nikolaus Day - the children leave their shoes outside their bedroom door on the night of the 5th-6th of December for St. Nikolaus to fill them.

If they've been good, it's chocolates and a little treat, if they've been bold, it's a stick and a bag of coals.

Take down Christmas decorations on the 6th of January, without fail.

Bake some traditional German style cookies.

Guten Abend !

Same here, we put our decorations up for the 6th December too

And I added that the Santa letter was put in the shoe and gone the next day.

We also do some traditional German Christmas baking. Even now that they are grown up, we meet up for it.
