I have always loved to cook from scratch and despite not being able to do it for a while, now I feel like I've a little more time on my hands and I'm getting the itch again.
I used to make up my own sauces and love trying new ones so if anyone does something from scratch that tastes amazing I'd love to give it a go if you dont mind posting it here, or even pm. Thank you |

I make this sauce to pour over meatballs or any pasta
3 Tablespoons each of soy sauce & vinegar & brown sugar
1 packet mushroom soup
1 tin chopped tomatoes
And 1 tin of water - use the tomato tin .
Mix it all in a bowl
Put in a pan turn heat up to mid heat and it thickens and it’s super tasty |

Fry Chicken,chorizo onions peppers garlic and chili
To make the sauce add chicken stock sundried tomatoes,tomatoe paste and cream. Add cooked pasta and parmesan at the end |

Add 250 ml of orange juice to a hot pan, 3 tablespoons of balsamic vinegar, 3 teaspoons of honey, stir constantly and reduce, add cream at the end, delicious with duck or pork |

I just bought pasta today and have everything else so I'll definitely give that one a go tomorrow. |

I have a fab german cookbook i got from amazon. Great to finally learn some traditional dishes. Got the christmas one as well. Plenty of time to be ready |

With wild garlic in the forest beside me I am eating a lot of wild garlic dishes. Wild garlic pesto is very simple to make. Blitz the wild garlic leaves, parmesan, garlic, lemon zest and sunflower seeds to a rough paste in a food processor. Season, and with the motor running slowly, add almost all the olive oil.
I keep this in the fridge and to make into a really delicious creamy sauce I will either add cream or cream fraiche and serve over pasta.
If you don't find wild garlic you can use basil instead for the pesto |

If you'd like to make any basic "curry" a good homemade paste I've found is:
1 inch fresh ginger
2 cloves garlic
1 onion/2 or 3 shallots
At least 3 fresh chillies
10 small dried chillies if you have them, soaked in warm water for 10 mins (otherwise use more fresh chillies)
3 tbsp oil (preferably sesame or peanut oil to keep the Asian flavour)
1 tbsp tamarind or else squeeze half a lime
Generous shakes of coriander
Generous shakes of turmeric
OPTIONAL: Crush the white ends of 3 lemongrass stalks and add in.
Blend in a blender/processor and add to either coconut milk, chopped tomatoes or whatever else type of "curry" you're making while in a medium-hot pan.
It's a reliable and delicious paste.

Homemade satay sauce
Sweat chopped onions with garlic, ginger and some brown sugar. Add a shake of chilli powder or flakes, slash of soy sauce and a tin of coconut milk, let simmer and reduce a little, blitz with a stick blender. Stir in a Tbsp or 2 of crunchy peanut butter. Season...I add a bit more soy if too sweet and needs balancing. My kids love this over chicken and rice
