Is there any way to find out someone’s user name, who has left the site but previously verified you?

Probably not. I believe all their data gets removed from the hosting server.

It still shows we have the verification does that mean they’ve left the site or hidden their profile do you know?

If you still see the wording of the verification then they've hidden the profile. If there's no wording but still showing on the summary - they either have blocked you or left the site.
