Is there any rule against copy and pasting a profile text and using it as your own ?

Probably not, unlike pictures of course

Text is text, you can't really lay claim to a bunch of it in a certain order

Heard of pics being used but not whole profile texts

How sad must the copier be tho.....?

Personally I would test the water by reporting them and seeing if admin take action or not.
