Is it possible to change my user title that appears at the top of my profile?

If you mean you want to change the bit which says:-

"Sub bi who enjoys..."

you can do this on your Edit Profile page (accessed through your My Account page, second from the right on the top menu)

Only admin can change a profile gender.

Your profile reads as a TV and since you're already verified you'll probably need to make a new profile.
