how can I change our account to a single women's account?

Your profile says Gaz only meeting now, on his own? So do you mean single male profile?

Also, your profile is verified and photo verified as a couple, so it would be very unfair to change it to a single. Easiest thing to do is delete your current profile, and set up a new one.

I want to change it to single woman as we aren't together anymore, I don't want to delete the account, can I change it to single?

You need to start a new profile. Ask all your veris to re-veri you on as a genuine person on your new account!
