If I delete a message before it’s been opened, does it delete from both profiles?

If you mean a message you have sent. Short answer is no.

I think blocking would remove it although don't quote me on that as i'm not 100% sure.

No even blocking doesnt remove it the only way it would delete is if you deleted your profile

I'm so intrigued ... Where do you find all this wonderful information about the logic of the site? How can you know this unless you've tested with two accounts?
