I've got a couples membership with a previous fb of mine but want to start going with another man, do I just turn up and sign up for a new membership with the new guy or do I have to revoke the other membership?

You have to sign up for new membership. Up to you if you remove old membership. I did with mine as a ex was signing people in as if they were me.
